Beef Strogonoff

Beef strogonoff is a wonderful meal that pleases just about everyone and makes an excellent Sunday dinner with very little prep time. This simple strogonoff recipe is a wonderful meal to impress dinner guests or can be altered slightly to create a delicious beef stew.

Ingredients

3 lb. Sirloin Tip Roast
1 Can Golden Mushroom Soup
1 Soup Can of Water
1 Pkg. Au Jus Mix (Lawry)
1 pint Sour Cream
1 Pkg. Wide Egg Noodles

Preparation

Cut roast into 1 inch cubes.  Place in heavy pan and pour soup and water over the meat.  Cover pan with lid or aluminum foil.  Bake at 325º for 3 ½ – 4 hours until very tender.  The meat can also be cooked using a slow cooker. Once meat is cooked, add a package of Au Jus Mix and allow to blend in.  Cook for 10 more minutes.  Stir the sour cream into the gravy and meat and serve over cooked, wide egg noodles.

Variation: For stew, take meat and gravy out of oven and instead of adding sour cream, add cooked carrots, potatoes and petite peas.
