Broccoli and Cauliflower Salad

This is a delicious summer salad with a wonderful, fresh taste. The addition of cheese and bacon make it appealing to even the pickiest eaters and it is a great way to get in a few extra servings of vegetables.

Ingredients

  • 1 head cauliflower, cut up
  • 1 bunch broccoli, cut up
  • 1 pkg. frozen peas, rinsed and thawed
  • 1 c mozzarella cheese, grated
  • 1 lb bacon, cook crisp and crumble

Dressing

  • 2 c mayonnaise
  • ¼ med. Onion, chopped fine
  • ¼ c sugar
  • ¼ c parmesan cheese
  • 2 t vinegar
  • ¼ t salt

Mix dressing. Let set in refrigerator overnight if possible. Mix all other ingredients except cheese and bacon. When ready to serve mix with dressing. Add bacon and sprinkle with cheese.
