Pinto Beans

Most kids are a fan of pinto beans and they are a great way to get some extra fiber into any diet. Pinto beans made from scratch do take a bit of extra time to prepare but they reheat well for a quick and healthy snack the next day.

Ingredients

1 pound pinto beans
3 cloves of garlic (diced)
1 heaping tbls of salt
2/3 cup of olive oil
1 diced onion

Preparation

Rinse and soak beans overnight in crock-pot. After soaking, drain and rinse the beans.

Return the beans to the crockpot and add enough water to come 1 ½ inch above the beans. Add garlic, salt, olive oil, and onion Cook all day on high (about 6 hours) The beans are done when you can smash them in your fingers Drain all water until it is just above the beans. Mix with a hand mixer until you get the desired texture.
