Simple Lunches – Black Bean Quesadillas

I’ve been trying to come up with some simple lunches to work into our menu since my son started asking me what kind of pizza we were going to be having for lunch each day. I used to make quesadillas all the time but for some reason I hadn’t made them in a while. Kids love them and it is easy to pack some extra nutrition into them without anyone noticing.

Ingredients
tortillas
black beans (or whatever you have on hand)
left over chicken or canned chicken (optional)
sour cream
salsa
cheese

I made this really simple by spraying my pan with some olive oil and then just laying an entire tortilla on top. Instead of folding it over, I filled it with cheese and canned beans that I had rinsed and then just topped it with another tortilla. This made it easier to cook more food at once and I didn’t have to mess with the cheese falling out. When the bottom tortilla started getting toasty and the cheese melted just enough to make both tortillas stick together I flipped it over until the other side was toasted.

I cut this into triangles with a pizza cutter and served it with sour cream (or whip cream as my son calls it) and salsa. I pulled out some fruit cups to go with it but it would be good with some rice as well.
