I made this w a half gallon of skim milk because I wasn't sure about whether we would like it and that's what I had on hand. It turned out but next time I'll use a whole gallon of milk. It is really a good cheese - it does remind me of ricotta and it's just as versatile. I keep it wrapped in Press n Seal and just break off a piece to crumble into everything from the paleek paneer recipe on this site to my homemade lasagne. Try this - it's SO easy and you feel so virtuous making something so good for you!
