We discovered this simple treat one summer when we were doing a lot of experimenting with our blender. We’d been making all kinds of smoothies and had an enormous watermelon that needed to be used up. Now my kids are old enough that they can devour an entire watermelon and still want a snack afterwards but at that point they were still young and eating that watermelon felt like an impossible task.
My husband, always willing to experiment with food, chopped the watermelon up and dumped the entire thing in the blender. After adding a few handfuls of ice, we had a deliciously refreshing summer drink and our watermelon didn’t go to waste. Now, this is our go-to recipe whenever we have leftover watermelon or just want a low-fat treat on a hot summer day.
- 1/2 Watermelon
- 1-2 cups Ice
While you’re at it, you may as well chop up the whole watermelon. Cut watermelon keeps just fine in the fridge for a day or so but it probably won’t last that long because your kids are going to ask you to make the whole thing.
Dump the watermelon chunks into your blender. Because watermelon is mostly water, you don’t have to add any extra water unless your blender gets stuck. Once you begin blending, the watermelon will turn into nearly straight liquid so it’s fine on it’s own.
Add the ice on top of the watermelon. You’ll add 1-2 cups of ice but you may not be able to fit it all in the blender until the watermelon is blended up. I try and add 1 part ice for every 3 parts watermelon and that will give you a fairly slushy consistency.
Add more ice as needed to get the consistency you want. I like mine with a lot of ice so I probably put closer to 2-3 cups of ice by the time all is said and done. Truthfully though, I don’t really measure so you’ll just have to play with it.
Blend your watermelon smoothie until it’s nice and slushy and enjoy!
