Recipe: Chard and Beans

Greens are insanely good for you but how often do we get around to adding them to our dinner plates? This simple recipe for chard and beans will help you use up all that fresh summer chard if you have a garden and is packed full of nutrients.

This easy dish makes a great side to anything you can throw on the barbecue and it’s simplicity makes it a great way to introduce your kids to some healthy greens without scaring them off. My kids only ate the beans the first time I made this dish but they’ve since warmed up to the idea.

Ingredients

  • 4 garlic cloves
  • 1 small onion, diced
  • 1 1/2 pound of chard
  • 3 Tbs + 1/2 cup of vegetable/chicken broth
  • 1 can of diced tomatoes (15 oz.), drained
  • 1 can of northern white beans (15 oz.), drained
  • 2 Tbs of lemon juice
  • 1 Tbs olive oil
  • Salt and pepper to taste

Preparation

Chop and rinse your chard. You can substitute any greens in this recipe. Collard greens or kale would be delicious.

Heat 3 Tbs of your broth in a pan. When it heats up, add the onions and garlic. Sauté for 3-4 minutes.

Add the 1/2 cup of broth and stir in tomatoes and beans. Bring the entire mixture to a boil then add your chard. Let that cook for about 5 minutes then season with salt and pepper. Stir in olive oil and lemon juice and serve immediately.
