Summer is here and that means it’s time for lots of amazing salads filled with fresh fruits and veggies. Litehouse Dressing sponsored today’s post so we can share our favorite twist on the classic cobb salad. This Summer Cobb Salad has all the things you love about Cobb salad with the addition of some fun summer veggies.
I can not get enough of fresh salads during the summer months and the classic cobb salad has always been one of my favorites. I thought it would be nice to lighten it up a bit by adding in some of my favorite summer veggies.
I’ve always heard that the cobb salad came about as a impromptu combination of leftovers when a hungry restaurant owner wanted to throw together a snack. The history is fitting because that’s how 99% of the salads are made in my house — chop up any veggies in the fridge, throw in some leftover chicken, mix it up and serve it up.
The end result is always perfection even if you never quite know what you are going to get before you start digging through the fridge.
Anything goes when it comes to salads.
The one place I do draw the line is my salad dressing.
This White Taco Soup is a creamy mix of chicken, green chilis, onion, and beans topped with cheese, and lime chips.
The lime tortilla chips are really what takes this recipe to the next level of yumminess. If you jut use regular chips I’d suggest squeezing in some fresh lime.
Your family will be begging for leftovers so you may want to double this one!
With school back in session, life has gotten very busy very quickly. It seems like I’m spending half my time putting out fires and juggling everyone’s schedule.
We have had so many social events lately, often at the last minute. Every time I turn around it seems like there’s another event I need to be at and most of them require food.
All these events are fun but finding a way to throw something together at the last minute can be challenging.
