This broccoli cauliflower salad is amazing! Someone brought this for me after my oldest son was born and I’ve been making it ever since. This makes an amazing summer side dish and it’s one that you can prepare ahead of time because it only tastes better the longer it sits (just leave out the cheese and bacon if you aren’t serving it right away).
This Texas Caviar with Avocado is one of my favorite healthy treats during the summer. It’s packed with flavor and perfect with some tortilla chips or eaten plain as a side at a summer BBQ. I love that this salsa is loaded with nutrients and with the black-eyed peas and avocado it’s a great way to get some protein and healthy fats into your diet.
I can’t get enough of fruit-filled salads during the summer. There’s something about throwing fresh strawberries into a salad that just makes it feel like a special treat! This spinach salad combines some of my favorite flavors and it’s perfect as a light lunch or as a fantastic side dish at a summer barbecue.
Split Pea Soup is a staple at my house after Easter. It’s a great way to use up your leftover ham bone and it’s a very mild, kid-friendly soup. My grandmother shared this split pea soup recipe with me years ago and I have fond memories of eating this soup at her house so it always reminds me of her when I cook it.
