Classic Chicken Salad with Cashews – Create the Perfect Quick Lunch!
Do you want the perfect homemade chicken salad? This classic chicken salad recipe has a little twist with the addition of cashews that absolutely takes it over the top.
I LOVE chicken salad. It’s always my favorite when it’s served at baby showers or summer get togethers. This classic chicken salad recipe is so easy to make though that there’s no reason to not make it more often! I threw this together (with a huge time saving tip) and my whole family loved it! This chicken salad is packed with grapes, celery, and cashews to give it a nice crunch and the flavor is AMAZING!

We took this salad over to the beach for a quick picnic and it was yummy. The fruit makes it so refreshing and I love the crunch of the celery and cashews. It makes the perfect summer lunch . . . just don’t get sand in it. That’s not so yummy.
This was such a huge hit that I may have to get in the habit of leaving it in my fridge this summer for quick lunches.
Chicken Salad Ingredients
- 4 chicken breasts, shredded
- 1 cup chopped celery
- 1/2 cup diced onion
- 1 1/2 cup sliced grapes
- 1 cup cashews
- 1 1/2 cup mayo. (I love this Avocado Oil Mayo to add some extra flavor)
- Salt and pepper, to taste
How to Prepare your Chicken Salad
Boil your chicken with some salt and a handful of diced onions for flavor. I cook mine for 20-30 minutes until it’s tender enough to shred with a fork.
Use this Trick for Shredding your Chicken

When your chicken is cooked, put the chicken into your mixture and turn it on. I love my Kitchen Aid mixer. I have the Professional series and with the amount of use it gets around my house, it is well worth having the extra power in the motor.
You don’t have to cut the chicken up or anything. The mixer will actually shred the chicken perfectly! I’d heard of this trick before but never tried it. I honestly didn’t really think it would work but it did and it was done in less than a minute. So easy!
I’m going to be using that trick for all my shredded chicken needs now.
Add in the mayo, chopped celery, diced onion, sliced grapes, and cashews and mix well. Salt and pepper to taste.
