This Texas Caviar with Avocado is one of my favorite healthy treats during the summer. It's packed with flavor and perfect with some tortilla chips or eaten plain as a side at a summer BBQ. I love that this salsa is loaded with nutrients and with the black eyed peas and avocado it's a great way to get some protein and healthy fats into your diet.
  • 2 cans black eyed peas
  • 1 red pepper, diced
  • 1 cup diced tomatoes
  • 1 cup corn
  • ¼ cup cilantro, chopped
  • 1 avocado, diced
  • 2 Tbsp olive oil (or avocado oil)
  • 2 Tbsp red wine vinegar
  • ½ tsp garlic powder
  • Juice of 1 lime
  • Salt and pepper to taste
  1. Combine the black eyed peas, diced pepper, tomatoes, corn, and cilantro.
  2. Dress with the red wine vinegar, olive oil, and lime juice.
  3. Season to taste and let the salad sit for a few hours to absorb all the flavors.
  4. Add the diced avocado just before serving so it doesn't go brown.
  5. Serve with tortilla chips or as a side salad.
