How to Make a “FatterBoy” Ice Cream Sandwich
Summer is almost at an end so we are hanging on to every last minute. No summer memory is complete without ice cream so we are enjoying a lot of lazy summer nights hanging out on the front porch eating ice cream and having fun as a family. Our ice cream of choice? FatBoy ice cream sandwiches. These ice cream sandwiches already come in some amazing flavors and have 25% more ice cream. We took things a step further and jazzed them up a bit as a fun family activity.
When you think of classic ice cream sandwiches, FatBoy ice cream sandwiches are the original “old school cool”. They’ve been around since 1925 and with their “ginormous” serving sizes, they definitely earned the name.
My girls love to get hands on in the kitchen so we though it would be fun to customize our favorite FatBoy ice cream sandwiches for a fun family activity.
Since FatBoy ice cream sandwiches are so huge, they leave a lot of space on the side that is perfect for dipping. We took some of our favorite toppings and had fun letting each kid customize their FatBoy ice cream sandwich.

Ingredients Needed
- FatBoy ice cream sandwiches (find some great promotions on your favorite flavors here)
- Toppings –Â We used sprinkles but you could also dip your ice cream sandwiches in crushed nuts, chocolate chips, crushed graham cracker or more.
Instructions
Spread your topping of choice onto a plate. Gently press your FatBoy ice cream sandwich into the toppings. Turn and repeat for each side of your ice cream sandwich.
We let each of the kids play with their own ice cream sandwiches. They picked the flavors and the toppings they wanted to use to coat the outside.
My husband decided to get a bit creative and used thinly sliced bananas. It was a bit more work to make but it was sure tasty when he was done. It tasted like a fun version of a banana split Sunday. Next time we’d probably layer them inside the sandwich, just so it would be a bit easier to eat.
Next time we’ll probably set up a “topping” bar and have several options that everyone can choose from.
If you are entertaining, this would be a really fun (and cleaner) variation of an ice cream Sunday bar — no scooping required. That will definitely be on our list of treats the next time we host a crowd for a backyard BBQ or outdoor movie.
Our little impromptu ice cream party was a huge hit and my kids loved just hanging out on the porch together and enjoying their ice cream. Little moments like that are when I find we have the most fun together and my kids really open up and tell me about the things that they’ve had on their minds. It was such a great way to just enjoy each other and relax after a busy summer day.
