My kids know that as soon as we wind down for the night, I’m going to be reaching for the hot chocolate.
It’s part of my nightly routine and is a major comfort treat for me.
These hot chocolate muffins taste just as good as the real thing. Instead of using cocoa in these, we used hot chocolate mix and topped them with mallow bits to give them all the flavors we love from our favorite hot chocolate.
Of course, just because they taste so much like hot chocolate doesn’t mean you can’t enjoy them with a nice hot cup of cocoa on the side.
We enjoy these throughout the holiday season and they are always a huge hit whenever we serve them.
Hot Chocolate Muffin Ingredients
- 2 cups flour
- 6 pouches hot chocolate
- 1/2 cup sugar
- 1/2 t salt
- 1 T baking powder
- 2 T butter
- 1 1/4 cup milk
- 2 eggs, beaten
- 1/2 cup applesauce
- 1 t vanilla
- 1/2 cup chocolate chips
- 1/2 cup mallow chips

Hot Chocolate Muffin Instructions
Combine the flour, hot chocolate mix, sugar, salt, and baking powder in one bowl. Use a whisk to combine.
In another bowl, combine the butter, milk, beaten eggs, applesauce, and vanilla.
Gently stir the wet ingredients into the dry ingredients.
Once mixed, fold in the chocolate chips.
Top the muffins with a small handful of mallow chips. These are different than mini marshmallows. They won’t melt as they bake so they will hold their shape and keep the appearance of marshmallows even after baking.
Scoop into muffin tins and bake for 15-16 minutes.
