Have you had your first fall cold yet this year? I love fall, but the one thing I don’t love is how often everyone gets sick. My family was down and out for over a week with a nasty bug a few weeks ago and I already have a few starting to sniffle again. We are fighting back with this Vitamin C Packed Mexican Quiche. The flavors in this are amazing and it is perfect for breakfast, lunch, or dinner.
Onions and peppers are packed full of vitamin C, and that’s my go-to when it comes to fighting off and preventing colds. We loaded this Mexican Quiche with veggies and stocked up on some cold fighting basics on our last trip to Albertsons.
I love Albertsons’ O Organics® and Signature Care™ store brands. I’ve found that I can get great quality products for a fraction of the price I’d spend on other brands, and with a family of 8, I’m always up for saving money whenever I can.
I’m always hopeful that if my family eats right that we can fight off colds and not have to deal with them at all. There’s always at least a few that are tougher than we are though, and when we do get sick, I make sure my medicine cabinet is stocked with some basics from Signature Care.
We’ve always found that Signature Care products from Albertsons work great for us. They are more affordable than the name brands and, with the same active ingredients; we find that they work just as well. With 6 kids, it seems like someone is always sick so we like to keep these on hand. This Mexican Quiche is super simple to throw together and makes the perfect meal, anytime of the day, especially when you feel like you are coming down with a cold.
Mexican Quiche Ingredients
- 3 large bell peppers
- 1 large onion
- O Organics Tortilla Chips
- 1 can Red Kidney Beans, rinsed
- 10 O Organics Eggs
- 1 1/2 cups O Organics Almond Milk
- 1 1/2 cups O Organics Shredded Mexican Cheese
- O Organics Salsa
Mexican Quiche Instructions
Dice your bell peppers and onion and sauté on med-high heat for 5-6 minutes, or until softened.
Stir in the kidney beans.
Divide your peppers mixture between two, lightly oiled, pie pans.
Top each pie with half the cheese.
In a large bowl, add the eggs and milk. Whisk until smooth.
Pour half the egg mixture into each pie pan.
Bake at 375° for about 35 minutes.
Enjoy topped with sour cream and salsa and with a side of O Organics Blue Corn Chips.
We may not be excited about getting sick this winter but at least with some great, nutrition-packed recipes like this up my sleeves we can (hopefully) fight off most of the colds. If/when we do get sick, I have some tried and true Signature Care products ready to treat whatever symptoms come our way.
