Pina Colada Shortcake

pina colada shortcakeIf you are looking for a fun summer dessert this is it! This pina colada shortcake is a tropical twist on the classic strawberry shortcake. I love this dessert because It’s DELICIOUS and it looks cute too. And guys, I just cant resist cute party food. It is also so quick and easy to make which is always a plus. You will be sure to impress your guests with this refreshing and light(ish) treat.

Ingredients
  • 3 T Sugar
  • 2 & ⅓ C Bisquick Mix
  • ½ C milk
  • 3 T salted butter, melted
  • Fresh Pineapple, cut into chunks
  • Whipped cream
  • Shredded Coconut
  • 1 cup Plain Greek yogurt or low fat sour cream
  • 1 ½ cups evaporated milk
  • 1 can sweetened Condensed Milk
  • 1 tsp Vanilla
Preparation
  1. Preheat oven to 425
  2. Mix bisquick, sugar, milk and butter until a soft dough forms.
  3. Drop dough into large spoonfuls onto a baking sheet. Bake for 10-12 minutes or until golden brown.
  4. When cooled, break up shortcake into smaller chunks
  5. Wisk together yogurt, sweetened condensed milk, evaporated milk and vanilla.
  6. In small bowls or cups, top shortcake with pineapple, yogurt mixture, whip cream and shredded coconut.
  7. Garnish with pineapple wedge
  8. Enjoy!
