If you are looking for a fun summer dessert this is it! This pina colada shortcake is a tropical twist on the classic strawberry shortcake. I love this dessert because It’s DELICIOUS and it looks cute too. And guys, I just cant resist cute party food. It is also so quick and easy to make which is always a plus. You will be sure to impress your guests with this refreshing and light(ish) treat.
- 3 T Sugar
- 2 & ⅓ C Bisquick Mix
- ½ C milk
- 3 T salted butter, melted
- Fresh Pineapple, cut into chunks
- Whipped cream
- Shredded Coconut
- 1 cup Plain Greek yogurt or low fat sour cream
- 1 ½ cups evaporated milk
- 1 can sweetened Condensed Milk
- 1 tsp Vanilla
- Preheat oven to 425
- Mix bisquick, sugar, milk and butter until a soft dough forms.
- Drop dough into large spoonfuls onto a baking sheet. Bake for 10-12 minutes or until golden brown.
- When cooled, break up shortcake into smaller chunks
- Wisk together yogurt, sweetened condensed milk, evaporated milk and vanilla.
- In small bowls or cups, top shortcake with pineapple, yogurt mixture, whip cream and shredded coconut.
- Garnish with pineapple wedge
- Enjoy!
