Dinner has to be fast around here and I’d like it to actually be eaten so it has got to be good. It’s something we’ve struggled with since the twins were born so when Minute® Rice offered to sponsor a post I knew it was just what we needed to help us quit the fast food habit we’ve gotten into while our live has been crazy this past year.
We’re getting back to the basics with simple proteins and quick cooking sides like Minute® Rice new Multi-Grain Medley. By keeping things simple I can get a healthy dinner on the table in 20 minutes or less and everyone still gets to eat the foods they love.
When I found out I was having twins I knew things would be interesting around here for a while. Any task that requires two hands, like cooking dinner, has definitely suffered. We’re relying on fast food or quick convenience options at home far more often than I would like. Not only does it make loosing the twin baby weight next to impossible but my energy levels have been way down because we aren’t eating the healthier foods we are used to.
Discovering time-saving solutions, like Minute® Rice, is definitely helping us get back to eating healthier foods again. My whole family loved this simple Lemon Dill Baked Salmon with Minute Rice pilaf and the whole thing was so easy I had it on the table 20 minutes after I started cooking! You can’t beat that. Fast food and it’s healthy too!
Lemon Dill Baked Salmon
1/4 cup butter, melted
1 lemon, squeezed
1 T dill
1/2 t garlic powder
salt, pepper to taste
1 Salmon steak
Combine the melted butter and lemon to make a simple sauce and spoon it over the salmon. Sprinkle the dill, garlic powder, salt, and pepper over the top of the salmon and bake for 20 minutes at 350º. Easy!
Minute Rice Pilaf
Minute® Rice is such a quick and easy side that it’s perfect for quick weeknight meals and I don’t know about you but I always manage to screw up regular rice so that’s a bit risky for me to make for dinner because I never know if it will be too wet or too dry to actually serve. Minute® Rice has a new multi-grain medley with a blend of long grain brown rice, Thai red rice, wild rice and quinoa that cooks up in 10 minutes. This is the perfect base to create a delicious rice pilaf that looks like it took a lot longer than it did.
4 celery stalks, diced
1/2 onion, diced
Minute® Rice Multi-Grain Medley, half a box
1/4 cup slivered almonds
Optional: chicken broth
Cook the Minute® Rice according to the directions on the box. You can use chicken broth instead of water to really push the flavor over the edge. When you add the rice, throw in the celery, onion. Before serving, stir in the slivered almonds. There you have it! A perfect rice pilaf in 10 minutes!
