MORE Chicken Dump Freezer Meals

MORE Chicken Dump Freezer Meals - Cook 7 meals in an hour with this freezer meal plan on BusyMommyMedia.com

Chicken dump freezer meals can save you so much time in the kitchen. In our first freezer menu plan, we featured some of my family’s favorite quick freezer meals. That was such a huge hit we had to follow up with some more of our favorites. These meals are designed to be quick to prepare (both before and after freezing) and they are all recipes that my kids have loved.

The best part? You can cook 7 meals in less than an hour! That saves so much time during the week. These aren’t your average freezer meals either. These are packed with flavor and always a huge crowd pleaser.

ON THE MENU

  • BBQ Chicken drumsticks (2)
  • Lebanese Chicken Stew
  • Apricot Chicken
  • Teriyaki Chicken (2)
  • Tex-Mex Chicken

GROCERY LIST

You can certainly make each of these recipes separately (or make 7 of one dish if you prefer). If you want to make all of them at once these are the ingredients you will need.

  • 4 pounds Chicken thighs
  • 5 pounds boneless skinless chicken breasts
  • 3 lbs chicken drumsticks
  • 2 15-ounce cans chickpeas, rinsed & drained
  • 1 12 oz jar roasted red peppers, chopped (a little over a cup)
  • 1 (12oz) jar apricot jam
  • 1 cup frozen or canned corn kernels
  • 1 (14oz) can diced tomatoes
  • 1 can tomato paste
  • 2 (14 oz) can tomato sauce
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 2 medium onions, chopped
  • 8 garlic cloves, minced
  • 2 Tbsp lemon juice (half a lemon)
  • 1 packet onion soup mix
  • ground cumin
  • dried oregano
  • 4 cloves garlic, minced
  • 2 bay leaves
  • soy sauce
  • apple cider vinegar
  • ginger root, minced
  • crushed red pepper flakes
  • honey
  • molasses
  • brown sugar
  • Worcestershire sauce
  • liquid smoke
  • garlic powder
  • black pepper
  • onion powder
  • salt
  • 1/2 cup dry white wine (optional)

HOW TO MAKE CHICKEN DUMP MEALS

There are some easy things that you can do to really simplify the process of making chicken dump meals. Once you do this a few times you’ll figure out what works for you. I shared some tips that work for me on our first chicken dump freezer meal menu plan.

For this menu plan, we did things a bit differently. I found a great deal on frozen chicken so rather than using fresh, I just put the frozen chicken directly into the freezer bags and added the other ingredients. The only change is the bags don’t lay quite as flat to freeze but this method is actually a bit faster than using fresh chicken.

Lebanese Chicken Stew

Ingredients

  • 4 boneless skinless chicken thighs
  • 4 garlic cloves, minced
  • 2 tablespoons ground cumin
  • 2 tablespoons tomato paste
  • 3/4 teaspoon crushed red pepper flakes
  • 1/2 cup dry white wine (optional)
  • 2 bay leaves
  • 2 15-ounce cans chickpeas, rinsed & drained
  • 1 12 oz jar roasted red peppers, chopped (a little over a cup)
  • 2 Tbsp lemon juice (half a lemon)

To Finish

  • Salt & Pepper
  • flat-leaf parsley, chopped
  • olive oil

Method

Combine all ingredients and put in a gallon size freezer bag. When ready to cook, thaw the bag and empty into a crockpot. Add two cups of water and set crockpot on low for 6-7 hours, until chicken is done. Remove chicken from soup, shred and return to pot. Add a cup or two of water as needed to reach desired soup consistency, taste for seasoning and adjust to your preference with salt, pepper and lemon juice.

To finish, stir in chopped parsley just before serving and drizzle with olive oil.

Serving Suggestion:

Serve with bread or pita for dipping and a green salad.

Apricot Chicken

Ingredients

  • 6 boneless skinless chicken breasts
  • 1 12oz jar apricot jam
  • 1 packet onion soup mix

Method

Combine apricot jam and onion soup mix. Add chicken to freezer bag. Pour sauce on top. Freeze.

When ready to eat, thaw the bag, add to crockpot, and cook for 4-6 hours on low.

Serving Suggestion

Serve over rice or noodles or alongside roasted vegetables and green salad.

Barbecue Chicken Drumsticks 

Ingredients

  • 3 lbs chicken drumsticks (0r any other chicken you’d like to use)
  • 3 cups barbecue sauce – I’d HIGHLY recommend using our favorite homemade BBQ sauce (ingredients are included on the grocery list) but in a pinch any BBQ sauce will do.

Method

Add chicken and sauce to a one gallon freezer bag. Seal bag and shake to coat chicken in sauce. Freeze. When ready to cook, thaw bag and empty contents into a crockpot. Set on low for 6 hours or until chicken is done. Remove pieces to serving dish and drizzle with sauce.

Serving Suggestion:

Serve alongside cornbread, baked potatoes, coleslaw or green salad, or pull the meat off the bones and serve in sandwiches.

Teriyaki Chicken

Ingredients

  • 3 lbs boneless skinless chicken breasts or thighs
  • 1/2 cup soy sauce
  • 4 cloves garlic, minced
  • 2 Tbsp ginger root, minced
  • 2 Tbsp. brown sugar

Method

Combine everything except for the chicken. Add chicken to freezer bags. Pour sauce on top. Freeze.

When ready to cook, thaw the bag, add it to the crockpot, and cook on low for 4-6 hours.

Serving Suggestion

Serve over rice with a side of sautéed or steamed vegetables, such as broccoli or peppers. Pineapple is great with this too.

Tex-Mex Chicken

Ingredients

  • 3 lbs boneless skinless chicken (thighs or breasts)
  • 1 14oz can diced tomatoes
  • 6tbsp tomato paste
  • 1 14 oz can tomato sauce
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 cup frozen or canned corn kernels
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 2 medium onions, chopped
  • 1 tbsp ground cumin
  • 2 tbsp dried oregano
  • 4 cloves garlic, minced

Method

Combine all ingredients in a one gallon freezer bag and freeze. When ready to cook, thaw bag and empty into crockpot. Set crockpot on low for 6 hours or until chicken is done.

Serving Suggestion

Serve over rice or quinoa with a side of beans, or serve over lettuce with crushed tortilla chips, grated cheese and avocado for a tex-mex salad.
